My Second Vegan Thanksgiving... This video says it all.

I made it!  I cannot believe this is my second year as a Vegan celebrating Thanksgiving!  Many wonderful meat free dishes were on the menu this year and everyone truly enjoyed the experience.
In my opinion Thanksgiving would not be Thanksgiving without creamy "cheesy" vegan mac and cheese..... who could resist .... the star of the show...

Where's The Protein?


As a former carnivore turned vegan, I am bombarded with questions all the time from family, friends, even perfect strangers. But there is one question that is asked at least a hundred thousand times a day.  
Where do you get your protein?  Well... I will show you ...


Below is an example of a protein packed meal. This is something I would enjoy for breakfast, lunch or dinner.  There's a bunch of stuff in there but I'll just point out the protein parts.   

 



  • Kale (yep kale has protein)  (and Calcium!)
And the secret power food hidden under all this deliciousness... Quinoa!

Plenty of protein.  No animals.

Believe me when I say, when done correctly a Vegan lifestyle is full, balanced and nutritious.

Shop Aldi for health food?!


This weekend I went to Aldi,  for the very first time. To be honest I was always skeptical of shopping there, I thought like many people, Aldi was not one of those stores that would carry very high quality food items.  Well I was wrong! I was thrilled and surprised to find they carry many healthy items! 

The produce section is small but the selection was pretty good. They had organic apples and bananas!! They also carry many USA grown produce and no GMO produce so thumbs up Aldi! 

I even found this totally vegan German rye bread (pictured below). Simply made using few ingredients (whole kernel rye, water, wholemeal rye flour, oat fiber, yeast. ) And it was so cheap I couldn't believe my eyes! I've spent 5-7 dollars for similar bread in whole foods. This one was only 1.79!  I was excited to find it. I am going to enjoy it topped with lots of yummy veggies and veganaise! Maybe a vegan curry chickn' salad!!  Vegan / healthy eating on a budget, it can be done! No excuses people!

Quick Recipe: Oatmeal with Fried Apples

Here is an awesome way to eat your oatmeal; with "fried" apples on top.
Don't worry they are not actually fried at all. :) 

Oatmeal with Fried Apples
 Oatmeal with Fried Apples

This makes 1-2 servings

Sliced apples (skin off) (organic is nice)
Add apples to saucepan with 1/4 cup water 
1 tbsp. vegan butter
Squeeze a fresh lemon 
Cinnamon to taste
Sweetener of choice (Stevia, honey, raw organic sugar etc.) to taste. 

Allow to simmer until apples are soft and sauce thickens. 

Cook oatmeal as per package directions but you want it sticky not watery. 

Top with fried apples and all that gooey cinnamon sauce.
